Salads Vegetarian Gluten Free

Victoria Salad

This salad is another family favourite! This salad is tangy and delicious.

Ingredients for Dressing

½ cup olive oil
3 Tbsp red wine vinegar
1 Tbsp lemon juice
2 Tbsp sugar
½ tsp salt
½ tsp garlic clove, crushed

Method

Combine all the ingredients

Ingredients for Salad

2 Tbsp butter
½ cup sunflower seeds, shelled
½ cup almonds, slivered
1 head leaf lettuce, any soft lettuce will do (I use butter lettuce)
2 green onions, chopped
1 can mandarin oranges, drained (or 1 fresh one mandarin)
1 ripe avocado, peeled and sliced

Method

  1. Sauté seeds and almonds until golden brown.
  2. Chop or break up the butter lettuce and add the other salad ingredients.
  3. Mix in the dressing when ready to eat.
