Indian Tossed Salad

Tangy and sweet, this tossed salad is delicious in any season.

A great summer salad.

Ingredients

1 cup kernels of corn, cooked and shucked or corn from a tin
½ cup cooked sweet potato, cubed
½ cup cooked regular potato, cubed
½ cup cucumber, cubed
½ cup red onion, thinly sliced
½ cup sweet but firm mango, cubed
¼ cup mint, chopped
¼ cup cilantro, chopped
3 green chilies, seeds and vein removed, and chopped fine
salt to taste
Date and tamarind chutney

Method

  1. Toss all the ingredients together except for the date and tamarind chutney.
  2. Add the chutney a little at a time till you acquire the desired taste.
