I serve this salad on a bed of lettuce and lay full stems of the coriander over it for decor.
Tip: Make the dressing one day ahead.
Ingredients for Oriental Dressing (Nuoc Cham)
4 teaspoons garlic, minced
2 thai green chilies, minced
2 Tbsp sugar
2 Tbsp hot water
½ cup Vietnamese or Thai fish sauce (a good brand is Red Boat 40 Degrees N.)
½ cup rice vinegar
4 Tbsp lemon or lime zest, finely grated
Method
Combine all the ingredients above to make the dressing. If possible, make it a day ahead.
Ingredients for Salad
2 ripe but firm mangos
1 red bell pepper, thinly sliced
6 green onions, thinly sliced (about ⅓ cup)
1 red onion, thinly sliced
½ cup fresh cilantro, chopped
¼ cup fresh mint, coarsely chopped
⅔ cup toasted cashews or peanuts, chopped
⅓ cup Oriental dressing for the salad
Method
- Mix in all the sliced, grated, and chopped ingredients, but only half of the sliced onions.
- Toss gently till combined well.
- Add the dressing and a pinch of salt.
- Sprinkle with nuts and the remaining onion slices.
