Thai Mango Salad

I serve this salad on a bed of lettuce and lay full stems of the coriander over it for decor.

Tip: Make the dressing one day ahead.

Ingredients for Oriental Dressing (Nuoc Cham)

4 teaspoons garlic, minced
2 thai green chilies, minced
2 Tbsp sugar
2 Tbsp hot water
½ cup Vietnamese or Thai fish sauce (a good brand is Red Boat 40 Degrees N.)
½ cup rice vinegar
4 Tbsp lemon or lime zest, finely grated

Method
Combine all the ingredients above to make the dressing. If possible, make it a day ahead.

Ingredients for Salad

2 ripe but firm mangos
1 red bell pepper, thinly sliced
6 green onions, thinly sliced (about ⅓ cup)
1 red onion, thinly sliced
½ cup fresh cilantro, chopped
¼ cup fresh mint, coarsely chopped
⅔ cup toasted cashews or peanuts, chopped
⅓ cup Oriental dressing for the salad

Method

  1. Mix in all the sliced, grated, and chopped ingredients, but only half of the sliced onions.
  2. Toss gently till combined well.
  3. Add the dressing and a pinch of salt.
  4. Sprinkle with nuts and the remaining onion slices.
