A delicious and spicy omelette, served with roti, jam, and cheese.
Excellent for breakfast, brunch, or lunch, poros can even be made into a sandwich! Another favourite in our home.
Ingredients
1 medium onion, diced small
½ cup packed cilantro, chopped
1 tablespoon mint (fresh), chopped
2 green chilies (thai) chopped very fine
¼ teaspoon turmeric
¼ teaspoon chili powder
1 teaspoon grated fresh ginger root
2 tablespoons diced deseeded tomat0
5 medium eggs
salt and pepper to taste
ghee or olive oil for frying
Directions
- Whip the eggs. Add the rest of the ingredients.
- Season with salt and pepper.
- Heat the ghee or oil in a pan and pour the mixture with a ladle into the heated oil. Cover the pan with a lid.
- When you think the bottom is half cooked, open the lid and flip the omelette over to cook the other side. You should be able to make two medium sized omelettes or 3 small ones.
- Serve with slices of lemon or lime, crusty warmed up French bread and some sliced cheddar. I love my omelette with a bit of bitter sweet marmalade on the side also.
