Eggs on Potatoes (Papeta per Eedu)

This dish is another Parsi classic. It’s a hearty and flavourful dish.

Ingredients

6 russet potatoes, sliced thin
4 large onions, sliced fine
4 green chillies
1 teaspoon ginger and garlic paste
salt to taste
1 teaspoon cumin seeds
3 tablespoons chopped cilantro
6 eggs
Oil

Directions

  1. Preheat the oven to 400 F.
  2. Heat oil and fry the onions a golden brown.
  3. Add potatoes and cook till the potatoes are almost done.
  4. Add the rest of the ingredients and salt. Allow the spices to blend in well. Keep stirring to prevent them from sticking to the bottom of the pan.
  5. Place the mixture in an oven proof dish.
  6. Beat eggs separately, gently mix the whites and the yolks, and salt the mixture.
  7. Pour over the potato mixture and bake in the preheated oven till the eggs are set. Serve hot.
