Parsi Bone Soup

Good on a wintry day as it warms you up to your bones.

Ingredients

1 Tbsp oil
8 beef bones with marrow or 1 chicken carcass
4 onions, cut in quarters
3 ginger, sliced into 1-inch pieces
6 cloves of garlic, left whole
2 cinnamon sticks
4 green cardamom
½ tsp black peppercorns
2 bay leaves
4 big carrots, cut into chunks
2 small turnips or stalks of broccoli
10 Roma tomatoes, cut in quarters

Directions

  1. Heat oil, add all of the above and let the tomatoes break down.
  2. Now put everything in a pressure cooker and cook it on medium heat.
  3. After it whistles, simmer for 30 min.
  4. Remove the bones and the cinnamon sticks and blend the rest.
  5. Strain and serve with a squeeze of lime or lemon.
