Good on a wintry day as it warms you up to your bones.
Ingredients
1 Tbsp oil
8 beef bones with marrow or 1 chicken carcass
4 onions, cut in quarters
3 ginger, sliced into 1-inch pieces
6 cloves of garlic, left whole
2 cinnamon sticks
4 green cardamom
½ tsp black peppercorns
2 bay leaves
4 big carrots, cut into chunks
2 small turnips or stalks of broccoli
10 Roma tomatoes, cut in quarters
Directions
- Heat oil, add all of the above and let the tomatoes break down.
- Now put everything in a pressure cooker and cook it on medium heat.
- After it whistles, simmer for 30 min.
- Remove the bones and the cinnamon sticks and blend the rest.
- Strain and serve with a squeeze of lime or lemon.
