Soups Gluten Free

Vichyssoise

A chilled soup made of leeks, potatoes, onions, and cream, all puréed.

Ingredients

4 leeks, finely slice the white parts
1 medium onion, finely sliced
¼ cup sweet butter
5 medium potatoes
1 quart chicken broth (I use homemade)
White pepper to taste
2 cups scalded full fat milk
2 cups half and half cream
1 cup whipping cream
Chives for garnish, chopped

Directions

  1. Lightly brown the sliced leeks and onions in butter.
  2. Add the sliced potatoes.
  3. Add the chicken stock, salt, and pepper.
  4. Boil the mixture for 30 minutes until tender enough to mash and strain through a fine sieve.
  5. Stir in the milk, the half and half, and bring to a boil again.
  6. Taste for seasonings, sieve again.
  7. Stir in whipping cream.
  8. Chill thoroughly.
  9. When ready to serve, sprinkle with chopped chives.
