A chilled soup made of leeks, potatoes, onions, and cream, all puréed.
Ingredients
4 leeks, finely slice the white parts
1 medium onion, finely sliced
¼ cup sweet butter
5 medium potatoes
1 quart chicken broth (I use homemade)
White pepper to taste
2 cups scalded full fat milk
2 cups half and half cream
1 cup whipping cream
Chives for garnish, chopped
Directions
- Lightly brown the sliced leeks and onions in butter.
- Add the sliced potatoes.
- Add the chicken stock, salt, and pepper.
- Boil the mixture for 30 minutes until tender enough to mash and strain through a fine sieve.
- Stir in the milk, the half and half, and bring to a boil again.
- Taste for seasonings, sieve again.
- Stir in whipping cream.
- Chill thoroughly.
- When ready to serve, sprinkle with chopped chives.
