Sweet Pea and Mint Soup

Delicious and healthy. This warm pea soup makes a great lunch or starter soup.

Ingredients

2 Tbsp unsalted butter
1 cup yellow onions, chopped
2 cups home chicken broth (I always use my homemade one)
4 cups frozen green peas
1 cup loosely packed mint leaves
1 tsp kosher salt
1 tsp sugar

Directions

  1. Melt butter over medium heat and add onions.
  2. Sauté to a golden brown.
  3. Add all the ingredients and bring to a boil.
  4. Reduce heat to simmer until the peas are cooked.
  5. Blend and serve.
