Delicious and healthy. This warm pea soup makes a great lunch or starter soup.
Ingredients
2 Tbsp unsalted butter
1 cup yellow onions, chopped
2 cups home chicken broth (I always use my homemade one)
4 cups frozen green peas
1 cup loosely packed mint leaves
1 tsp kosher salt
1 tsp sugar
Directions
- Melt butter over medium heat and add onions.
- Sauté to a golden brown.
- Add all the ingredients and bring to a boil.
- Reduce heat to simmer until the peas are cooked.
- Blend and serve.
