A light refreshing soup. I often serve this soup in the cantaloupe shells as soup bowls.
Prep Time: 10 minutes
Makes 4 servings.
Ingredients
2 ½ cups cantaloup, diced
⅓ cup fresh orange juice
½ cup vanilla yogurt
1 tsp ginger, freshly grated
2 tsp lime juice
salt to taste
pepper (preferably white) to taste
mint sprigs (for garnish)
Directions
- Blend together all the ingredients.
- Strain and serve.
- Garnish with mint sprigs and melon slices.
