A wonderful late summer treat. This salad is truly delish.
Ingredients for Dressing|
6 Tbsp virgin olive oil
3 Tbsp balsamic vinegar
2 tsp dijon mustard
1 tsp maple syrup
1 tsp fresh lemon juice
salt to taste
black pepper to taste, freshly ground
Method
Add all ingredients into a jar and shake until emulsified.
Ingredients for Salad
⅓ cup almonds, slivered and toasted in butter
6 oz. lettuce (romaine or spring), sliced fine
1 ripe but firm Bartlett pear, cut into 1-inch pieces
½ cup ricotta or feta
⅓ cup dried cranberries
5 red seedless grapes, halved
5 green seedless grapes, halved
Method
- Place the lettuce, fruits, and cranberries layered.
- Add the feta and almonds.
- When ready to serve, toss with as much of the above dressing as desired and serve immediately.
