Pear Salad

A wonderful late summer treat. This salad is truly delish.

Ingredients for Dressing|
6 Tbsp virgin olive oil
3 Tbsp balsamic vinegar
2 tsp dijon mustard
1 tsp maple syrup
1 tsp fresh lemon juice
salt to taste
black pepper to taste, freshly ground

Method
Add all ingredients into a jar and shake until emulsified.

Ingredients for Salad

⅓ cup almonds, slivered and toasted in butter
6 oz. lettuce (romaine or spring), sliced fine
1 ripe but firm Bartlett pear, cut into 1-inch pieces
½ cup ricotta or feta
⅓ cup dried cranberries
5 red seedless grapes, halved
5 green seedless grapes, halved

Method

  1. Place the lettuce, fruits, and cranberries layered.
  2. Add the feta and almonds.
  3. When ready to serve, toss with as much of the above dressing as desired and serve immediately.
