This is a very healthy appie full of B vitamins and iron. I started eating it when my blood report showed a very low red blood corpuscle count. After eating this twice a week for 3 weeks my blood was in balance. It’s a great way to get some good nutrition.
Approximately 20 appetizer servings.
Ingredients
½ kg chicken livers (if not organic and/or strong liverish smell, soak in milk overnight)
5 cloves garlic, chopped
2 onions, chopped
½ teaspoon pepper
2 tablespoons cognac or sherry
1-3 tablespoons of ghee
Cream if needed
Bread crumbs if needed
Directions
- In 1 tablespoon oil and 1 tablespoon butter, lightly fry onions and garlic till softened. Add the livers and pepper and cook until almost all the pink in the liver is gone.
- Add the cognac or sherry and flame and cook off. Place all this in the blender and blend gently with 1-3 tablespoons of ghee.
- To get the consistency you like, if the mixture is dry, add some cream. If the mixture is wet, add breadcrumbs sparingly.
- Season with salt and pepper. At this point you may add some more sherry to your taste.
- Place in a lined mold and chill.
