Savoury Almonds

These savoury almonds are perfectly spiced with cumin, chilli, and a hint of sweetness, making them an irresistible snack on their own and a crunchy, flavourful topping for salads.

Approximately 8 servings.

Ingredients

2 cups blanched almonds (dry with no moisture in them)
6 tablespoons sugar
1.5 teaspoons salt
1.5 teaspoons pepper
1.5 teaspoons cumin powder
1.5 teaspoons chilli powder
2 tablespoons olive oil

Directions

  1. Create the spice mix by placing the salt, pepper, cumin powder, and chilli powder in a bowl.
  2. Heat oil on medium heat.
  3. Add almonds and coat the almonds with oil by stirring them around.
  4. Add the sugar and stir till the almonds turn a caramel colour.
  5. Remove the pan from the stove. Line a baking sheet with parchment and spread out the nuts (no overlapping). Now sprinkle the spice mix making sure that all the nuts are coated well.
  6. Cool completely and store in an air-tight container.
