A Mexican classic, this version of guacamole is from my Mom’s 80th Birthday in Puerto Vallarta. The family had gathered at a Mexican Restaurant for a celebration. The waiter made this Guacamole in front of us.
Serves 4-6 people.
Ingredients
2 avocados, ripe cut and mash
2 green onions, chopped fine
2 small Roma tomatoes, chopped fine (no seeds)
3 tablespoons cilantro, chopped
3 small Thai chilies or 1 jalapeno (no seeds), chopped fine
1 lime, juice only
salt to taste
Directions
- Mash together the avocado, lime juice and salt.
- Add all the chopped ingredients
- Add salt to taste.
- Refrigerate one hour before serving.
