Q’s Cheesy Dip

This cheesy appie is simple and delicious, and so quick … done in 5 minutes!

Serves 6-8 people.

Ingredients

½ cup old cheddar cheese (or any cheese that you like that can melt well)
¾ cup mayonnaise or sour cream
2 green onions, chopped fine
4 sprigs of fresh cilantro, chopped fine
2 green chillies deseeded, chopped fine
5 mint leaves, chopped fine

Directions

  1. Mix all the ingredients well.
  2. Microwave at half strength and cook it until all the cheese melts into the mayonnaise or sour cream. (I put my microwave on power level 5 for about 1 minute).

Now it’s ready. You can use it in many ways. The following are some of mine:

  • As a dip with celery, bread sticks, carrot sticks etc
  • Put a wee bit on French bread rounds and put it under the broiler just
    until it melts and looks slightly brown.
  • Roll a crepe with a filling of your choice and drizzle this mixture on top and garnish it with snipped coriander or cilantro.
  • Serve it over salt and pepper pork chops, or even over a grilled steak.
  • Drizzle it over grilled asparagus, peppers, green beans, Brussels sprouts, broccoli, cauliflower or zucchini.
